Great White
Oat Bran, honey, oil, and milk. A dense crumb.
Five Grain
Bob’s Red Mill 5 grain, rolled oats, barley, rye, triticale, rolled wheat, flaxseed, oil, and molasses. A dense crumb.
Rye
Rye, whole wheat, white flour, and caraway seeds. Thinner crust and dense crumb.
Seeded Loaf
Kelly Ranch whole wheat flour, rye, white flour, and honey with flax, poppy, sesame, and sunflower seeds. A light open crumb topped with seeds and a single score on top.
Baguette
Flour, water, yeast, salt. Crunchy crust, light open crust inside. Perfectly simple. Vegan.
Seeded Baguette
Baguette with fennel, flax, and sesame seeds on top.
Ciabatta
Same ingredients as the baguettes but more hydration. The dough is hand cut and the air bubbles are kept inside for a light open crumb. Loaf or roll.
Fougasse
Ciabatta dough cut into leaf shapes with Maldon Sea Salt and rosemary on top.
